Hawaiian Zucchini Bread

hawaiian zucchini breadMaking this bread reminded me of beautiful Hawaii…….I have been there several times with my hubby….I call him Farmer Bob these days……since his has a green thumb…..

and we had such a great time….Not only is it beautiful but so peaceful…

#2 hawaaiian zucchini breadLot’s of fresh pineapple there……On our very first trip to Hawaii….this was many years ago… we visited the “Dole Pineapple Farm”…..had my first fresh pineapple ice cream……yum……the best pineapple I have ever had…..it was picked that very day to make the ice cream…..

So I decided why not make some zucchini bread with Crushed Dole Pineapple……of course it was in the can…..but still delish….

This bread turned out so moist and if you look closely …… chunks of pineapples…..everywhere…..  🙂

This recipe makes 2 standard size loaves…..You can keep one and give the other away…..

What a lovely gift to give to that special friend or family member….

Victorian-Stroll “Hawaiian Zucchini Bread” Recipe

Ingredients:

3 cups grated zucchini

4 eggs

1 (8 ounce) can crushed pineapple, undrained

1 cup vegetable or canola oil

2 teaspoon baking soda

1 ½ teaspoon salt

5 tablespoon ground cinnamon

1 tablespoon nutmeg

3 ¼ cup all-purpose flour

3 cups sugar

Directions:

Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda, salt, cinnamon, nutmeg and sugar. In another bowl, combine eggs, zucchini, pineapple and oil. Mix dry ingredients into the wet ingredients. Spray 2 loaf pans with nonstick spray. Cook for 1 hour 5 mins. or until butter knife comes out clean.
