Yep…..here it is ……
You can have your chocolate and veggies….all at the same time…..
life is good!
This bread is loaded with chunks of semi-sweet chocolate….
let us not forget the zucchini……
and what a ZUCCHINI !!!!
The garden is producing an abundance of zucchinis this year…..
feeling very blessed to have such an overload of fresh fruit and vegetables….
this zucchini took the spotlight….
Farmer Bob did not see it earlier in the week…so it kept growing…..and growing…..and growing…..and…..oh well…..lets just say….we are proud parents of a 4 pound 6 ounce, almost 19 inch long ZUCCHINI…….
Part of that huge zucchini went into making this bread…..
the other part… into the freezer it goes….
Hope you try out this recipe….Makes 2 loaves… can be frozen up to 6 months
“Chunky Chocolate Zucchini Bread”
3 1/4 cup all-purpose flour
2 teaspoon baking soda
1 1/2 teaspoon salt
3 tablespoons cinnamon
1 tablespoon nutmeg
3 cups sugar
3 cups grated zucchini
1/3 cup water
1 cup vegetable or canola oil
8 ounces semi-sweet baking chocolate bar, broken into chunks
Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda, salt, cinnamon, nutmeg and sugar. In a medium bowl, combine eggs, zucchini, water and oil. Mix dry ingredients with wet ingredients. Stir until blended. Now stir in chocolate chunks. Spray 2 standard size loaf pans with non-stick spray. Cook for 1 hr. 15 minutes or until butter knife comes out clean.
