 I just love summer veggies….One of my all time favorites is TOMATOES…

When these guys start showing up in the garden….

They must get together

and decide to ripe all at ONCE…..

Soooooo……

I decided to make this totally awesome

BRUSCHETTA Recipe

#2 bruschetta

I’m so proud of my hubby, Farmer Bob…..He’s been working hard out in the garden to make sure all the fruit of the vine are happy….

 Well….this one is extremely happy……

the biggest tomato out of our garden yet…..

weighting in proudly just under 1 pound….. 🙂

Farmer Bob was so thrill……..

I had to take several pictures of the beauty……

Still on my kitchen counter……today is the day we slice into jumbo….that’s what we named it….

#3 Bruschetta

 Getting back to the Bruschetta….

My family love this so much…..

I had to make 3 batches in one day…..

I used fresh basil…..yum

fresh garlic…..yum again

fresh onion….do I hear another yum…..

and balsamic vinegar…..triple yum….

#4 bruschetta

 Put all that on some toasted Italian bread that’s been

drizzled with olive oil & minced garlic…..

and last but not least fresh parmesan cheese…..

Delish!!!!!

Victorian-Stroll “BRUSCHETTA RECIPE”

Ingredients:

2 cups of fresh tomatoes, chopped

3 tablespoons fresh basil, finely chopped

3 cloves of garlic, minced, divided

1 small white or red onion, finely chopped

2 teaspoons balsamic vinegar

1/4 teaspoon salt

1/4 teaspoon pepper

1 loaf of Italian Bread, sliced

1/3 cup parmesan cheese, grated

1/4 cup extra virgin olive oil

Directions:

1. In a medium size bowl, toss together, tomatoes, basil, 2 cloves of minced garlic, onions, balsamic vinegar, salt and pepper.

Refrigerate for a least 1 hour.

2.  When ready to serve…..preheat oven to 450 degrees.

3.  Place sliced bread on large baking sheet.  Drizzle each slice with olive oil, remaining minced garlic…..then sprinkle some parmesan cheese on top

4.  Bake for 5 minutes or until bread starts to crisp.
